Vinification Details: Grapes harvested at optimum ripeness during night temperatures to preserve fruit freshness. Fermentation conducted at low temperatures 55-58° F with carefully selected aromatic yeast lead to wines with more intense fragrances and expressive mouthfeel. Post fermentation, the wines are kept in stainless steel tanks to preserve their brightness and balance.
