Vinification Details: Sauvignon Blanc from the Casablanca Valley was processed at the winery without any air contact to preserve freshness and fruit character. After a cold maceration for 12 hours, with the juice in contact with the grape skins, the ferment proceeded slowly at consistently cool temperatures. This approach enabled the fresh fruit and mineral aromas to be drawn out.
